Salmon Patties with Mustard Sauce

Ingredients

  • 2 (7 oz.) cans of sockeye salmon, undrained
  • 3 cups Rice Krispy cereal
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped onions
  • 2 eggs
  • 2 Tbsp. lemon juice
  • 1/2 tsp. pepper
Mustard Sauce:
  • 1/2 cup non-fat sour cream
  • 1/4 cup light mayo
  • 1 Tbsp. fresh or dried dill
  • 1 Tbsp. Dijon (or regular) mustard
  • 1/4 cup chopped tomatoes
  • 2 Tbsp. sliced green onions

Directions

Place salmon and liquid in a large bowl. Remove skin and center bone and discard. Add remaining salmon patty ingredients and thoroughly combine. Shape mixture into 12 patties.

Put 2 Tablespoons of oil in a fry pan over medium heat. When the pan is hot, add patties and cook 4 minutes on each side or until brown. Serve hot with Mustard Sauce.

To make Mustard Sauce, combine sauce ingredients.

Source: From Allrecipes web site. We just had it tonight and it was a big hit for all 6! It's especially important to use the red salmon for best flavor.
