What is a good substitute for pork in this carnitas crockpot recipe?

I would try beef, chuck roast or bottom round would turn out well. This would probably be good with dark meat chicken, too. I like the boneless, skinless chicken thighs for use in the crockpot. Don't have to worry about fishing out all the bones.
