Tofu Chocolate Pudding

Ingredients

  • 1 lb. tofu (plain)
  • 1 large ripe banana
  • Water as needed
  • Dash of cinnamon and nutmeg
  • 1/2 tsp. vanilla
  • 1/3 cup of honey
  • 2 1/2 Tbsp. oil
  • 2 Tbsp. carob powder or cocoa

Directions

Cut tofu into small pieces. In a food processor or blender, combine banana, honey and oil. Add tofu, piece by piece, blending in between. If the mixture is too thick, which will depend on the amount of moisture in the tofu, add water a Tbsp. at a time until mixture reaches a pudding consistency. Add carob powder or cocoa, vanilla, cinnamon and nutmeg and process or blend until smooth. Serve chilled.

For those of us who love tofu, a GREAT BIG THANK YOU for your wonderful recipe!

* Many people think that tofu is only good in stir fry to replace meat... I did until I tasted a wonderful apple-cinnamon-tofu pie at a potluck... Now that was ONE YUMMY treat for the taste buds!

These days I've made many unusual things with tofu including a tasty tofu "cream cheese" filling for muffins. All you do is add a bit of honey & vanilla to the tofu then make it smooth & creamy by putting it into the blender... For a tofu icing you can also add a bit of orange or lemon zest into the blender along with the honey & vanilla. To thin it out & give it some "tang" add a bit of orange juice concentrate or lemon juice... Tofu, the "shape-shifter" of foods...
