Pork And Veggie Fried Rice

Ingredients:

  • 3 Tbsp. Cooking oil
  • 4 eggs
  • 1/4 cup meat, diced (I use minced cooked pork)
  • 1 Tbsp. onion, chopped (yellow or white onion)
  • 4 cups rice, cooked the day or night before
  • 2 tsp. soy sauce
  • 1 tsp. curry powder (optional)
  • 1 pinch white pepper
  • 1 cup bean sprouts
  • 2 Tbsp. peas, cooked
  • 2 Tbsp. peanuts (I chop mine)

Directions:

Set wok or pan you normally use for stir frying, over high heat. Add 2 tablespoons cooking oil, swirling to coat sides. Add eggs and scramble. Remove and set aside. Add remaining oil and stir in meat and onion. Toss for 1 minute, then add rice. Stir fry until rice is soft and separates, the add eggs along with soy sauce, curry, pepper and bean sprouts. Toss to mix, then add peas. Sprinkle with peanuts and serve.

Note: Garlic and ginger can be added before scrambling eggs. Can also add scallions, if desired.

Peanut oil is traditional for frying Chinese food. You might want to add a couple drops of sesame oil, too, for that smoked flavor.
