Recipe: Pork Chop Casserole

Ingredients
- 4 pork chops
- 4 cups thinly sliced potatoes
- 1 can cream of celery soup
- 1 cup milk
- 2 Tbsp. chopped onion
- 1/4 tsp. salt and dash of pepper
Directions
Season and brown pork chops on both sides. Arrange sliced potatoes in a 2 qt. casserole. Mix remaining ingredients and pour over potatoes. Place pork chops on top. Cover and bake at 375 degrees F for 1 hour and 15 minutes.

Way back in 1970, when I was first married, I attempted to fix a recipe very similar to this for my husband. We were living in a rental apartment with an ancient gas stove. I followed the recipe to the letter, did everything it said, and after cooking for an hour, it still wasn't done. The beans (which were frozen, not canned) were still frozen. Not long after that, we bought an oven thermometer and found out the over was 200 degrees off! To this day, that was one of three complete failures at meals. (My husband insists it was only three, although I'm sure it was more than that.) (06/17/2009)

Recipe: Tomato Pork Chop Casserole

Ingredients
- 4 pork chops
- 4-5 potatoes, quartered
- 1 onion, sliced
- 4 large carrots, cut in large chunks
- salt, pepper, spices to taste
- 1 tin tomato soup
- 1 tin water
Directions
Lightly brown pork chops and put in a roasting pan. Add cut up vegetables. Mix spices with soup and water, mix together and pour over everything. Bake at 350 degrees F for about an hour. Serves 4.
Source: My mom used to make this when I was a kid, and my husband and I love it!

Ingredients
- 1 can cream of mushroom soup
- 1 carton sour cream
- 6 pork chops
- flour
- parsley flakes (opt.)
- salt and pepper to taste
- 5 cups 1/4 in. thick sliced potatoes
Directions
Combine soup and sour cream in bowl, mixing well. Coat pork chops with seasoned flour. Place potatoes in 9x13 inch buttered casserole. Arrange pork chops on top. Cover with sour cream mixture. Bake at 350 degrees F for about 1 1/4 hours or until pork chops are tender.

Ingredients
- 3/4 cup flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 6 pork chopp=s (1 inch thick)
- 2 Tbsp. cooking oil
- 1 can cream of mushroom soup
- 2/3 cup chicken broth
- 1/2 tsp. ground ginger
- 1/4 tsp. dried rosemary (crushed)
- 1 cup sour cream (divided)
- 1 can French fried onions (divided)
Directions
In a shallow bowl, combine flour, salt and pepper; dredge pork chops. Heat oil in large skillet; cook pork chops 4 to 5 minutes per side. Place in single layer in ungreased 9x13 inch pan. Combine soup, broth, ginger, rosemary and 1/2 cup sour cream; pour over chops. Sprinkle with 1/2 the onions. Cover and bake at 350 degrees F for 45 to 50 minutes. Stir in remaining sour cream and top with remaining onions. Uncover, return to oven for 10 minutes.

Ingredients
- 4-6 pork chops
- 1 Tbsp. shortening
- salt and pepper, to taste
- Prepared mustard
- 1 can cream style corn
- 1 cup bread crumbs
- 1 cup coarsely sliced celery
- 1/2 cup sliced onion
- 1/2 cup diced green pepper
- Small amount of water
Directions
Brown the chops in the shortening. Season. Pour off any excess fat. Spread a little mustard on each chop. Combine the corn, crumbs, celery, onion and green pepper. Cover the chops with this mixture. (Add a small amount of water to the mixture if it seems a bit dry.). Bake at 350 degrees F for about 1 hour.
