Pork Chop Casserole

Ingredients:

  • 4 pork chops
  • 2 Tbsp. lard
  • 2/3 cup rice
  • garlic salt and pepper to taste
  • 4 Tbsp. minced onion
  • 1/2 tsp. marjoram
  • 1/2 tsp. basil
  • 1 can green beans
  • 1 can tomatoes

Directions:

Brown chops; mix all other ingredients and pour into casserole with chops on top. Cover; bake 1 hour at 350 degrees F.

Tip: Pork Chop Casserole

Ingredients:

  • 1 1/2 cups dried lima beans
  • 4 cups water
  • 4 tsp. salt
  • 6 center cut pork chops
  • 2 Tbsp. flour
  • 1/3 cup ketchup
  • 2 Tbsp. brown sugar
  • 3 Tbsp. minced onion
  • 3/4 tsp. dry mustard
  • 1/2 tsp. black pepper
  • 1/4 tsp. minced garlic
  • 1 small bay leaf

Directions:

Wash beans and soak overnight in water. Add 3 teaspoons of the salt and bring to a boiling point. Simmer one hour or until beans are almost soft. Drain water and save it. Put beans in 2 1/2 quart casserole. Flour chops, sprinkle with last teaspoon salt and brown in fat which was trimmed off the chops. Place chops on top of beans.

Combine remaining ingredients with 1 1/2 cups of bean water. Pour over chops and beans. Cover and bake at 325 degrees F. for 1 hour or until chops and beans are tender. Remove cover and bake 30 minutes longer. Serve hot.

Recipe: Pork Chop Casserole

Ingredients:

  • 6 pork chops
  • 1 sliced onion
  • 1 cup uncooked rice
  • 1 28 oz can tomatoes
  • 1/4 cup water
  • salt and pepper

Directions:

Arrange chops in single layer in bottom of greased 9x13 inch pan. Sprinkle rice evenly over chops. Top with sliced onions. Pour tomatoes and water over all. Season with salt and pepper. Bake 350 degrees F for one hour. Lift chops to top of mixture for browning and bake an additional 15 minutes.

Recipe: Pork Chop Casserole

Ingredients:

  • 4 pork chops
  • 2 Tbsp. salad oil
  • 1 can creamy onion soup
  • 1/4 lb. Velveeta cheese
  • large potatoes, peeled and sliced
  • salt and pepper, to taste

Directions:

Brown pork chops in oil. Remove chops from pan and mix soup with drippings. Add cheese and simmer until melted. Put potatoes in greased 9x13 inch pan. Lay pork chops over top of potatoes. Cover with cheese sauce. Cover and bake at 325 degrees F for 1 1/4 hours.

Ingredients

  • 4-5 potatoes
  • 4-5 pork chops
  • 1 can cheddar cheese
  • 1 can French onion soup

Directions

Slice potatoes into 9x13 inch casserole dish. Arrange pork chops over potatoes. Combine soups and pour over pork chops and potatoes. Cover with foil. Bake in 350 degree F oven for 1 hour.

Recipe: Pork Chop Casserole

Ingredients

  • 4 pork chops
  • 4 cups thinly sliced potatoes
  • 1 can cream of celery soup
  • 1 cup milk
  • 2 Tbsp. chopped onion
  • 1/4 tsp. salt and dash of pepper

Directions

Season and brown pork chops on both sides. Arrange sliced potatoes in a 2 qt. casserole. Mix remaining ingredients and pour over potatoes. Place pork chops on top. Cover and bake at 375 degrees F for 1 hour and 15 minutes.

RE: Pork Chop Casserole

Way back in 1970, when I was first married, I attempted to fix a recipe very similar to this for my husband. We were living in a rental apartment with an ancient gas stove. I followed the recipe to the letter, did everything it said, and after cooking for an hour, it still wasn't done. The beans (which were frozen, not canned) were still frozen. Not long after that, we bought an oven thermometer and found out the over was 200 degrees off! To this day, that was one of three complete failures at meals. (My husband insists it was only three, although I'm sure it was more than that.) (06/17/2009)

Recipe: Tomato Pork Chop Casserole

Ingredients

  • 4 pork chops
  • 4-5 potatoes, quartered
  • 1 onion, sliced
  • 4 large carrots, cut in large chunks
  • salt, pepper, spices to taste
  • 1 tin tomato soup
  • 1 tin water

Directions

Lightly brown pork chops and put in a roasting pan. Add cut up vegetables. Mix spices with soup and water, mix together and pour over everything. Bake at 350 degrees F for about an hour. Serves 4.

Ingredients

  • 1 can cream of mushroom soup
  • 1 carton sour cream
  • 6 pork chops
  • flour
  • parsley flakes (opt.)
  • salt and pepper to taste
  • 5 cups 1/4 in. thick sliced potatoes

Directions

Combine soup and sour cream in bowl, mixing well. Coat pork chops with seasoned flour. Place potatoes in 9x13 inch buttered casserole. Arrange pork chops on top. Cover with sour cream mixture. Bake at 350 degrees F for about 1 1/4 hours or until pork chops are tender.

Ingredients

  • 3/4 cup flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 6 pork chops (1 inch thick)
  • 2 Tbsp. cooking oil
  • 1 can cream of mushroom soup
  • 2/3 cup chicken broth
  • 1/2 tsp. ground ginger
  • 1/4 tsp. dried rosemary (crushed)
  • 1 cup sour cream (divided)
  • 1 can French fried onions (divided)

Directions

In a shallow bowl, combine flour, salt and pepper; dredge pork chops. Heat oil in large skillet; cook pork chops 4 to 5 minutes per side. Place in single layer in ungreased 9x13 inch pan. Combine soup, broth, ginger, rosemary and 1/2 cup sour cream; pour over chops. Sprinkle with 1/2 the onions. Cover and bake at 350 degrees F for 45 to 50 minutes. Stir in remaining sour cream and top with remaining onions. Uncover, return to oven for 10 minutes.

Recipe: Pork Chop Casserole

Ingredients

  • 4-6 pork chops
  • 1 Tbsp. shortening
  • salt and pepper, to taste
  • Prepared mustard
  • 1 can cream style corn
  • 1 cup bread crumbs
  • 1 cup coarsely sliced celery
  • 1/2 cup sliced onion
  • 1/2 cup diced green pepper
  • Small amount of water

Directions

Brown the chops in the shortening. Season. Pour off any excess fat. Spread a little mustard on each chop. Combine the corn, crumbs, celery, onion and green pepper. Cover the chops with this mixture. (Add a small amount of water to the mixture if it seems a bit dry.). Bake at 350 degrees F for about 1 hour.
