Jellied Waldorf Salad

This is a bit of a different spin on traditional Waldorf salad. It has been in my late husband's family for years and was always a staple on our Thanksgiving, Christmas and or Easter dinner table.

Ingredients:

  • 1 Envelope Knox Unflavored Gelatin
  • 1/3 cup sugar
  • 1/8 tsp. salt
  • 1-1/2 cups water (divided)
  • 1/4 cup lemon juice
  • 2 cups diced apples
  • 1/2 cup diced celery
  • 1/2 cup chopped pecans

Directions:

Mix gelatin, sugar and salt with 1/2 cup of the water in a small sauce pan. Heat until dissolved. Remove from heat.

Stir in 1 cup water and lemon juice. Refrigerate until thickened (about 30-40 minutes). Makes 4 cups.

Fold in apples, celery and nuts and refrigerate until set.

Recipe: Jellied Waldorf Salad

Ingredients

  • 1 package lemon gelatin (3oz.)
  • 1/8 tsp. salt
  • 1/2 cup mayonnaise
  • 1 cup diced celery
  • 1 1/2 cups diced apples
  • 1/2 cup chopped nuts
  • 1 cup Cool Whip

Directions

Dissolve gelatin in 1 cup hot water in large bowl. Chill until partially set. Add salt and mayonnaise, blending well. Fold in remaining ingredients. Pour into 1 qt. mold. Chill until firm.
