Ingredients:
- 2 lbs. fresh sweet potatoes (baked & peeled)
- 1 cup sour cream (divided)
- 1/4 cup milk
- 1 egg
- 2 Tbsp. brown sugar (packed)
- 1/2 tsp. cinnamon
- Salt to taste
Directions:
Whip sweet potatoes, 3/4 cup sour cream, milk, egg, sugar and cinnamon. Add salt. Put mixture into 1 1/2 quart casserole. Microwave on medium heat about 5 minutes or until heated through. Spread remaining 1/4 cup sour cream over the top. Microwave 1 more minute and serve hot.
