1970s Weight Watcher's Cheesecake Recipe

We loved a Weight Watchers creation from the 70s and can't remember all the ingredients. Does anyone have the cheescake recipe that included cottage cheese, dry milk, gelatin, vanilla, etc.? We put it in custard dishes and used it for a lunch (2/3 cup cottage cheese portion). We would really appreciate anyone's input. Thanks so much.

1970s Weight Watcher's Cheesecake Recipe

This doesn't have dry milk, but maybe:

No Cooking Chiffon Cheesecake

  • 1 envelope unflavored gelatin
  • 2 Tbsp. lemon juice
  • 1/2 cup hot water
  • 2 eggs, separated
  • 2 1/2 tsp. sugar substitute
  • 18 ounces cottage cheese
  • 1 cup crushed ice

    Sprinkle gelatin on lemon juice placed in blender container. Add hot water, egg yolks, sugar substitute, cheese and crushed ice. Turn on high speed and run until well blended. Fold in egg whites, that have been beaten until they form peaks. Chill until set (sets very gradually). 4 servings. Very easy, very good. (10/20/2010)

    Keep in mind that this recipe uses uncooked eggs. Food safety experts now consider eating raw eggs to be unsafe. You can get salmonella poisoning which can be fatal. You could try using eggbeaters and the product called just whites. Both products come in cartons in the dairy case. Both are pasteurized so they would be considered safe to eat uncooked.     1970s Weight Watcher's Cheesecake Recipe

    My mom used to make this when I was a child.

    • 2-2/3 cups cottage cheese
    • 1 16oz can crushed pineapple, drain and reserve juice
    • 10 packets of artificial sweetener
    • 2 envelopes unflavored gelatin
    • 1 tsp vanilla or coconut extract
    • Cinnamon
    Place pineapple juice in small saucepan and sprinkle with gelatin. Do not stir. Let sit about 5 minutes. Use low heat and stir until gelatin is dissolved. Add all ingredients to blender or food processor except cinnamon. Blend until smooth. Sprinkle with cinnamon and chill until set.

    1970s Weight Watcher's Cheesecake Recipe

    I think this is what you're looking for:

    • 1-graham cracker pre-formed pie crust
    • 8 oz lite cream cheese
    • 16 oz low fat cottage cheese
    • 1/4 cup undiluted and unsweetened apple juice
    • 1 tsp. almond extract
    • 3/4 cup of boiling hot water
    • 0.60 pkg. of sugar-free Jell-O (flavor of your choice)

      Blend ingredients and pour in pre-formed pie crust. Chill and serve.
