Apricot Nectar Salad

This is an apricot lover's dream. You can also add chopped pieces of apricot, if you would like, though the recipe does not call for that.

Ingredients:

  • 2 (3 oz.) pkgs. orange gelatin
  • 2 cups boiling water
  • 2 cups apricot nectar
  • 1 pkg. mini marshmallows
  • 1/2 cup chopped pecans
  • 1/2 cup sugar
  • dash salt
  • 2 Tbsp. flour
  • 1 egg, beaten
  • 1 cup apricot nectar
  • 1 cup Cool Whip

Directions:

Add boiling water to gelatin, then the 2 cups apricot nectar. Let cool awhile. Then add marshmallows and pecans; let set until firm.

Combine sugar, salt, flour, egg, and 1 cup apricot nectar. Cook over medium heat until thickened. Remove from heat and cool completely.

Add Cool Whip and spread over jellied mixture.
