Blueberry Bread Recipes

Blueberries are a wonderful addition to quick bread. They can be combined with other fruit flavors, like orange or apple. This sweet bread makes a perfect breakfast or after school snack.

Ingredients:

  • 2 cups blueberries, fresh or frozen
  • 3 cups flour
  • 1/2 cup sugar
  • 1/2 tsp. baking soda
  • 1 Tbsp. baking powder
  • 1/2 tsp. ground mace or nutmeg
  • 1 Tbsp. butter or margarine
  • 2 eggs, beaten
  • 1 cup unsweetened applesauce

Directions:

Preheat oven to 350 degrees. Spray 13x5 inch non-stick loaf pan or 8 inch square cake pan with cooking spray.

Stir together flour, sugar, baking soda, baking powder, and mace or nutmeg. Cut in butter or margarine. Combine eggs and applesauce. Stir into dry ingredients until completely mixed. Fold in blueberries. Fill prepared pan with batter. Bake at 350 degrees F for 50 minutes. Cool in pan 20 minutes. Turn out on rack to complete cooling.

Grease bottom only of loaf pan (9x5x3) with cooking spray, or line bottom with waxed paper. Stir all ingredients except blueberries and Glaze in a large bowl until blended. Lumps are OK. Pour into pan. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.

Preheat oven to 350 degrees F. Thoroughly grease a 10 inch tube pan. Mix sugar and cinnamon. Cut biscuits into quarters. Roll each piece in cinnamon sugar mixture. Arrange 1/4 of the biscuits and blueberries in pan.
