Breakfast Casserole


  • 3 medium boiled potatoes,
  • 4 hard boiled eggs
  • 1 cup chopped ham
  • 1 cup sour cream
  • salt and pepper to taste
  • 1 egg and buttered bread crumbs (optional)


Peel and chop the potatoes and eggs. Mix together potatoes, hard boiled eggs and ham. Add salt and pepper to taste. Place in 2 1/2 qt. buttered casserole dish. Set aside.


In a small bowl mix together sour cream and slightly beaten egg. Spread this mixture over the casserole ingredients (I like to mix it into the other ingredients). Top with buttered bread crumbs* and bake in a 350 degree F oven for about 30 minutes or until hot and bubbling. Serves 4-5.

* For buttered bread crumbs,melt 1/4 cup butter is small pan. Add 1 cup dried bread crumbs. Stir over low heat until just slightly browned.

I double or tripple this recipe for a large group of people and increase the cooking time.
