This delicious quiche is loaded with broccoli and cheese. It is super easy to make and is sure to be a hit with the whole family!

Ingredients:

  • 1 frozen deep-dish pie crust
  • 2 cups broccoli florets
  • 1 cup vintage white cheddar
  • 4 eggs
  • 1 cup milk
  • 1 onion, finely chopped
  • 1 Tbsp butter
  • salt, pepper, and garlic powder (to taste)

NOTE: I used a regular pie crust for this recipe and it overflowed. It requires a deep-dish crust.

Steps:

  1. Preheat oven to 350 degrees F.
  2. Put frozen crust into the oven and bake until light golden brown. Approximately 8-10 minutes. If crust puffs up, prick it with a knife and continue baking.
  3. Bring water to boil in a sauce pan. Boil broccoli for 3-5 minutes or until tender but crispy. Remove broccoli from water and drain on a paper towel.
  4. In a frying pan, heat butter over medium-high heat. Add onion and season with salt, pepper, and garlic powder; to taste. Cook until onions are translucent and tender.
  5. Put eggs and milk into a medium bowl. Beat well with a whisk.
  6. Add cheese and onion to egg mixture. Stir to combine.
  7. Spread the broccoli out in the pie crust.
  8. Pour egg mixture over the broccoli. Place the quiche on a baking sheet.
  9. Bake for 40-50 minutes or until quiche is set in the middle and the top is starting to turn golden brown.

  11. Remove quiche from oven and place on a wire cooling rack. Allow to cool for 10 minutes.

Ingredients:

  • Pastry for single crust 9-inch pie or homemade crust (your choice)
  • 1/4 cup grated Parmesan cheese
  • 2 cups chopped fresh broccoli
  • Ad

  • 1 cup shredded Swiss cheese
  • 1/4 cup sliced scallions
  • 3 eggs
  • 2/3 cup chicken broth
  • 1/2 cup light cream (dieters) or heavy cream for non dieters)
  • 1/2 tsp. salt
  • 1/4 tsp. Tabasco pepper sauce

Directions:

Line 10 inch quiche dish or 9-inch pie plate with pastry. Prick bottom and corners of pastry with fork. Bake in 450 degree F degree oven for 5 minutes. Remove from oven; sprinkle with 2 Tbsp. Parmesan cheese. Layer half the broccoli over Parmesan cheese. Continue with layers of half Swiss cheese and scallions; repeat with remaining broccoli, Swiss cheese, and scallions.

Beat eggs. Add chicken broth, cream, salt, and Tabasco; mix well. Pour over broccoli mixture in pastry shell. Sprinkle with remaining 2 tablespoons Parmesan cheese.

Bake 10 minutes at 450 degrees F degrees. Reduce heat to 325 degrees F; bake 20 to 25 minutes longer or until knife inserted in center of pie comes out clean. Let stand for 5 to 10 minutes before cutting.
