Step 2
You have to cut down the middle of the back. You need to break the spine so that it lies flat.
I like to watch some of the YouTube videos but sometimes I want to STOP the picture for a few seconds and that is impossible with your hands in the middle of a chicken!
I like most of Rachel Ray's instructions as she seems to know that many people need to "keep it simple"..
