Chicken Thighs with Roasted Apples

Ingredients:

  • 5 cups peeled, chopped apples
  • 1 tsp chopped fresh sage
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 4 garlic cloves, chopped
  • 1/2 tsp salt, divided
  • Cooking spray
  • 8 chicken thighs (about 2 pounds), skinned
  • 1/4 tsp black pepper

Steps:

  1. Preheat oven to 475 degrees F.
  2. Mix the first 5 ingredients in a bowl.
  3. Add 1/4 tsp of the salt and blend again.
  4. Put the mixture in a foil-lined pan.
  5. Sprinkle the chicken with the remaining 1/4 tsp. salt and put on top to the apple mixture.

  7. Cook 40-45 minutes, or until done.
