Tender and moist. Cooks on top of the stove, so it doesn't heat up the kitchen much. Good for any time of the year.

Total Time: About an hour

Yield: 8 chicken thighs

Ingredients:

  • 1 lemon
  • 1 Tbsp grated fresh ginger
  • 1/2 tsp salt
  • 2 Tbsp honey
  • 1 Tbsp reduced-sodium soy sauce
  • 8 chicken thighs with bone
  • 2 tsp vegetable oil
  • sliced green onions and lemon wedges (optional)

Steps:

  1. Shred the peel from the lemon (I used a microplane), and juice the lemon.
  2. In a bowl combine the lemon peel, ginger and salt.
  3. In another bowl combine the lemon juice, honey, soy sauce and 2 tablespoons of water.
  4. Rub lemon peel mixture under the skin of the chicken thighs.
  5. In a 12-inch skillet, heat the oil and place the chicken skin-side down until it is brown, about 7 minutes.
  6. Turn the chicken and add the lemon juice mixture. Reduce heat, cover and cook 14-18 minutes longer or until done (180 degrees F). Note: My chicken took over 35 minutes to cook. It depends on the size of the thighs.
  7. Transfer chicken to plates. Skim fat from pan juices, if desired. You can put some of the juices on top of the chicken. If you want, you can garnish with scallions or lemon wedges.

Buy a family pack of chicken thighs. Slice a 1/2 inch filet from each side of thigh, leaving the bone-in piece. This yields three finger-dipping size of meaty pieces. Roll in hot wing rub. Place in oven at 350 degrees F for 30 minutes or deep fry until crispy and done.

Total Time: 30 minutes

Yield: 3 per thigh

So easy. Place the chicken in a single layer in to a baking dish. Stir the stock and mustard in a small bowl.

You can use chicken breast halves instead of thighs but I just happen to prefer dark meat. Preheat oven to 375 degrees F.

Pound each chicken thigh to about 1/4 inch thickness. Sprinkle each side with salt and pepper to taste.

This is a very inexpensive recipe since it calls for making your own BBQ sauce and uses chicken thighs. It's also tasty.

I had some leftover chicken broth and red wine, which I had froze. I decided to use it tonight with excellent results. I used boneless chicken thighs, but any chicken pieces will do.

Place lemon juice, broth, oil, garlic, and oregano in a large resealable plastic bag or medium glass bowl. Add chicken, seal bag or cover bowl, and marinate at least 2 hours or up to overnight in refrigerator.
