Crispy Baked Chicken Thighs on plateThis is a recipe for healthy, crispy chicken thighs without deep frying or a lot of oil. This can be eaten as an entrée, or as an appetizer, cut for snack finger food.

Prep Time: 10 minutes + 30min/1 hr marinate

Cook Time: 40 minutes

Total Time: 50 minutes

Yield: 4 people

Ingredients:

  • 4 lb chicken thighs
  • 2 Tbsp salt
  • 2 Tbsp olive oil
  • 2 Tbsp garlic powder
  • 2 Tbsp pepper
  • 2 Tbsp sugar
  • 1-2 Tbsp rosemary

Steps:

  1. Remove bones, wash and pat dry thighs.
  2. Mix together the seasoning - salt, pepper, sugar, rosemary. Then marinate chicken thighs with the seasoning for 30 minutes - 1 hour in the fridge.

  4. Line foil, drizzle with olive oil, add chicken thighs over and sprinkle garlic powder on the tops of each chicken thigh.

  6. Bake at 405 degrees for 40 minutes, or until ready.

Tender and moist. Cooks on top of the stove, so it doesn't heat up the kitchen much. Good for any time of the year.

Buy a family pack of chicken thighs. Slice a 1/2 inch filet from each side of thigh, leaving the bone-in piece. This yields three finger-dipping size of meaty pieces.

So easy. Place the chicken in a single layer in to a baking dish. Stir the stock and mustard in a small bowl.

You can use chicken breast halves instead of thighs but I just happen to prefer dark meat. Preheat oven to 375 degrees F.

Pound each chicken thigh to about 1/4 inch thickness. Sprinkle each side with salt and pepper to taste.

I prefer recipes that are quick and easy to prepare but this one, I will have to say, is not simple, but it is so good! When I make it, I make a lot and freeze the leftovers.

They are great to reheat later for an easy meal or lunch at work. They can be quickly reheated in the microwave or served crispy by heating them in the oven.

I had some leftover chicken broth and red wine, which I had froze. I decided to use it tonight with excellent results. I used boneless chicken thighs, but any chicken pieces will do.
