I saw this on TV and had to make it at home. It's a healthy and hearty soup and it was so good.


  • 1 1/2 tsp ground cumin
  • 1 1/4 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, plus more to taste
  • 2 boneless skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 cup diced onion
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red bell pepper
  • 3 cloves garlic, minced
  • 1 10 oz. can diced tomatoes and green chilis (Rotel)
  • 4 cups chicken broth
  • 4 cups hot water
  • 3 Tbsp tomato paste
  • 1 15 oz. can black beans, drained and rinsed
  • 3 Tbsp corn meal
  • 5 small corn tortillas
  • Garnishes
  • diced avocado
  • diced red onion
  • sour cream
  • chopped fresh cilantro
  • cheese


  1. Preheat oven to 375 degrees F.
  2. Ad

  3. Combine cumin, 1 tsp. chili power, garlic powder, and salt in a small bowl.
  4. Drizzle chicken with 1 Tbsp olive oil. Sprinkle with 1 tsp. of the spice mixture. Set the rest of the spice mixture aside. Bake until chicken is cooked through, about 15-20 minutes. Remove from oven, cut into cubes, and set aside.
  5. Heat remaining 1 Tbsp. olive oil in a large pot over medium-high heat. Add onions, green and red peppers, and garlic. Add a tablespoon of the spice mixture and 1/4 tsp. chili powder. Saute' vegetables, stirring, until they begin to turn golden brown, about 5 minutes.
  6. Add chicken, diced tomatoes and juice, chicken broth, hot water, and tomato paste. Stir to combine and bring the mixture to a boil. Reduce heat to low and add black beans.
  7. Mix cornmeal with 1/2 cup of the soup broth. Add the mixture to the pot and simmer the soup for 10-15 minutes. Add salt and seasonings to taste.
  8. Cut the tortillas into 2-3 inch strips. Place several tortlilla strips in the bottom of your serving bowls and top with soup.
  9. Top with desired extra toppings and extra tortilla strips. Enjoy!

It is full of fiber and lower in calories than many taco type soups (and quick).


  • 1 1/2 cups chicken broth
  • 1/2 water
  • 1 can black beans (rinsed and drained)
  • Ad

  • 1 can fat free refried beans (with green chiles if you want)
  • 1 cup chunky salsa
  • 1/2 pound ground turkey or 1 shredded chicken breast (can also use leftover meat)
  • 1 cup frozen corn
  • light sour cream
  • reduced fat tortilla chips (or just baked corn tortillas broken into pieces
  • cheddar or mozzarella cheese


In a large pan combine the beans, broth, corn, salsa, chicken and water. Bring to boil. Reduce heat; cover and simmer for 10 minutes. Crumble some of the tortilla chips into soup bowls. Ladle soup over chips. Top each serving with a few more chips, a sprinkle of cheese and a spoon of light sour cream. This makes about 6 servings.

Does anyone have a recipe for Chicken Tortilla Soup? Safeway now sells various kinds of soup pre-made and they are very good but pretty expensive. Thanks, Sandy



Chicken Tortilla Soup

I teach a cooking class everyday and the following soup recipe is one of my client's favorites, It's also inexpensive to make.


Sliced black olives, diced green and red bell pepper, chopped onion, shredded Mexican cheese, sour cream or guacamole.

Combine all soup ingredients except flour tortillas in slow cooker. Stir to mix. I like to leave this in the fridge overnight, it gives better flavor. Cook on low 5-6 hours or high 3-4. When hot- Cut tortillas into 1 by 1/2" strips. Place to cover bottom of serving bowls. Pour hot soup over tortilla strips and serve with toppings. Soup can also be made on top of the stove. Combine the same as above and bring to a boil. Let simmer 15-20 minutes. Serve as above.


Note: If you boil the chicken and add 1/2 tsp. Better Than Boullion to the water, the chicken will have a better flavor. The soup will be thick. If you desire, add a little water but it will taste better if you don't. Serves 4-6 hearty servings. (06/02/2004)
