Coffee Flan from Leftover Egg Whites

Most of the time home cooks use 4 egg yolks and 4 whole eggs in making Leche Flan (commonly known as Custard Pudding with a sweet caramel on top). This is to make the pudding stiff and smooth.

Do not throw away the 4 egg whites separated from the yolks. Here is a simple recipe where you can cook it the same way as the Leche Flan. Aside from the coffee flavor the consistency and texture differs as it is more spongy than the custard pudding.

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Ingredients:

  1. In a llanera, melt the sugar over low heat.
  2. Use spoon to stir sugar repeatedly until it is caramelized. Set llanera aside.
  3. Ad

  4. Beat the egg whites and pour in condensed milk.
  5. Add 2 drops of vanilla extract.
  6. Ad

  7. Then the coffee. Stir until coffee is fully blended.
  8. Pour mixture in llanera.
  9. Ad

  10. Cook in the steamer for 30 minutes.
  11. See if it is fully cooked by inserting toothpick or fork. When it comes out clean, your coffee flan is cooked.

  13. Chill for 20-30 minutes and serve.
