My son gave me a slow cooker with a stirring attachment, and I love to play with my new toy. I've made this soup on the stove top, but I don't want to stand over it for 40 minutes, stirring, but it's great in the slow cooker.
Prep Time: 10-15 minutes
Cook Time: 40 minutes on stove top, 2-3 hours in slow cooker
Total Time: Anywhere from 1 to 3 hours
Yield: Approximately 6 cups

*Don't be a Velveeta snob! I like cheddar better, too, but it doesn't melt like Velveeta. I used to turn up my nose at Velveeta, but no more.
** Or, use as much or as little as you like. I'm not crazy about broccoli, so 8 oz. is plenty for me.
I sometimes substitute salmon for the broccoli for a creamy salmon soup.
