Ingredients

  • 1 small onion, minced
  • 1/2 cucumber, seeded, minced
  • 1 Tbsp. lemon juice
  • 1 hard cooked egg, quartered
  • 1 1/2 cups 2 percent cottage cheese
  • 2 oz. blue or Roquefort cheese
  • salt and pepper to taste

Directions

Blend onion, cucumber, lemon juice, and egg in blender. Add cheeses, blend 3 seconds. Season.

Extremely good.

Ingredients:

  • 1 lb. cottage cheese
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1 (1/2 oz.) pkg. green onion dip mix
  • 1/2 cup minced cucumber

Directions:

Blend cottage cheese and cream cheese until thoroughly combined. Blend in remaining ingredients. Chill. Makes about 2 cups.

Very good on crackers or sandwiches. If you'd like a dip, add a small amount of buttermilk.

Ingredients:

  • 6 (8 oz.) pkgs. cream cheese
  • 1 cucumber
  • 1 onion
  • 1/2 tsp. salt
  • 1 cup mayonnaise
  • 2 cups Miracle Whip
  • green food coloring

Directions:

Allow cream cheese to soften at room temperature. Peel onion and cucumber and grind. Drain off juice. Beat cream cheese with electric mixer and add cucumber and onion. Add a few drops of green color at this point so it will mix in evenly as you proceed. Gradually add mayonnaise and salad dressing, continuing to beat until mixture is the right consistency for a dip. Serve with raw vegetables or chips. Yield: 2 quarts.

Ingredients

  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 medium cucumber, peeled, seeded and chopped
  • 1 garlic cloves, pressed
  • 1 Tbsp. minced fresh dill or 1/4 tsp. dill weed
  • salt and pepper, to taste
  • Assorted fresh veggies: such as carrots, cucumber, mushroom, zucchini, red or green pepper, celery, green onion or radishes

Directions

In medium bowl, combine sour cream and mayonnaise; stir in cucumber, garlic, and dill. Season with salt and pepper. Serve with fresh veggies.
