Do you like those English muffin toasting bread loaves that they sell at the grocers, but don't like the price?

Neither did I, then I found this recipe (then lost it and just found it again!)
These are mini versions of those loaves which are perfect for the two of us here. You can also make regular sized loaves for larger families.
I like to use one while I freeze the rest to enjoy anytime~

Total Time: 1 hr 20 minutes (including a 45 minute rise time for the bread)

Yield: 6 mini loaves or 3 regular sized bread loaves

Ingredients:

  • 5 cups flour
  • 2 pkg. dry yeast
  • 1 Tbsp sugar
  • 2 tsp salt
  • 1/4 tsp baking soda
  • 2 cups milk
  • 1/2 cup water
  • cornmeal

Steps:

  1. Combine 3 cups flour, yeast, sugar, salt and baking soda.
  2. Ad

  3. Heat liquids until very warm, but NOT scalding. Add them to dry ingredients.
  4. Mix well.
  5. Add up to 2-2 1/2 more cups of flour to make a stiff batter.
  6. Pour into pans that have been greased and sprinkled with cornmeal.
  7. Sprinkle top with cornmeal. Cover and let rise in a warm place for 45 minutes.
  8. Bake at 400 degrees (F) for 25 minutes.
  9. Remove from pans immediately and cool.

Yummy with butter or jelly~
Enjoy!
