Loaves cooling on rack.Do you like those English muffin toasting bread loaves that they sell at the grocers, but don't like the price?

Neither did I, then I found this recipe (then lost it and just found it again!)

These are mini versions of those loaves which are perfect for the two of us here. You can also make regular sized loaves for larger families.
I like to use one while I freeze the rest to enjoy anytime~

Total Time: 1 hr 20 minutes (including a 45 minute rise time for the bread)

Yield: 6 mini loaves or 3 regular sized bread loaves

Ingredients:

  • 5 cups flour
  • 2 pkg. dry yeast
  • 1 Tbsp sugar
  • 2 tsp salt
  • 1/4 tsp baking soda
  • 2 cups milk
  • 1/2 cup water
  • cornmeal

Steps:

  1. Combine 3 cups flour, yeast, sugar, salt and baking soda.
  2. Heat liquids until very warm, but NOT scalding. Add them to dry ingredients.
  3. Mix well.
  4. Add up to 2-2 1/2 more cups of flour to make a stiff batter.
  5. Pour into pans that have been greased and sprinkled with cornmeal.
  6. Sprinkle top with cornmeal. Cover and let rise in a warm place for 45 minutes.
  7. Bake at 400 degrees (F) for 25 minutes.
  8. Remove from pans immediately and cool.

Yummy with butter or jelly~

Combine 3 cups flour, yeast, sugar, salt and soda. Heat liquid to 120-130 degrees F. Add to dry ingredients and beat well.

Stir in enough flour to make batter stiff. Grease and sprinkle 2 loaf pans with cornmeal.

English Muffin Loaf

6 c flour
1/4 tsp soda
2 pkgs dry yeast
1 tbs sugar
2 tsp salt
1/2 c water
2 c milk
cornmeal

Combine half the flour, yeast, sugar, salt & soda. Heat liquids to 125-130. Add to dry mixture & beat well. Stir in remaining flour to make a stiff batter. Pat into 2 8x4 greased pans sprinkled with cornmeal. Cover & let rise for 25 min. until dough is 1/2 above pan. Bake at 400 for 25 min. Remove immediately.
