Mini English Muffin Loaves

Loaves cooling on rack.Do you like those English muffin toasting bread loaves that they sell at the grocers, but don't like the price?

Neither did I, then I found this recipe (then lost it and just found it again!)

These are mini versions of those loaves which are perfect for the two of us here. You can also make regular sized loaves for larger families.
I like to use one while I freeze the rest to enjoy anytime~

Total Time: 1 hr 20 minutes (including a 45 minute rise time for the bread)

Yield: 6 mini loaves or 3 regular sized bread loaves

Ingredients:

Steps:

  1. Combine 3 cups flour, yeast, sugar, salt and baking soda.
  2. Heat liquids until very warm, but NOT scalding. Add them to dry ingredients.
  3. Mix well.
  4. Add up to 2-2 1/2 more cups of flour to make a stiff batter.
  5. Pour into pans that have been greased and sprinkled with cornmeal.
  6. Sprinkle top with cornmeal. Cover and let rise in a warm place for 45 minutes.
  7. Bake at 400 degrees (F) for 25 minutes.
  8. Remove from pans immediately and cool.

Yummy with butter or jelly~

My Mom use to make this bread and put in greased coffee cans. They came out round and easy to cut. Now with the new coffee cans they have a lip on them and it would be hard to get bread out.

If you want to make them in a coffee can, use the kind of can opener that cuts the edge of the can around the edge under the lid to cut that lip off. It leaves a smooth edge that isn't sharp, and would make the can usable for this purpose.

How big are the packages of yeast? I am in Canada & everything is metric so if this is a recipe from US it usually is different! ????

One packet of yeast is 1/4 oz. That is 11 ml in the metric system. Hope this helps.

If using mini loaf pans, do you still bake for the same amount of time?

My mini 5 loaf pans usually bake them for 17 min , all ovens vary in temperatures but it a good place to start . My kinda go to is I check the temp of bread and if its around 190 its done .
