Fig Muffin Recipe

Fig muffins with fresh figs on the table next to them.

Ingredients

  • 1/4 cup butter (softened)
  • 1/2 cup sugar
  • 3 eggs
  • 2 cups fig preserves (mashed with syrup)
  • 1 cup rolled oat (old fashioned)
  • 1 1/2 cups all-purpose flour
  • Advertisement

  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Directions

Cream butter and sugar. Add eggs and beat well after each. Add fig preserves with syrup. Stir in oatmeal and sifted flour, baking powder, soda and salt. Mix only enough to moisten dry ingredients.

Bake in buttered muffin cups in preheated 375 degree F oven for 15 - 20 minutes. Serve warm.

If the grocer store does not have them you might find some for sale in news paper or at fleamarkets or yard sales. Put an add in paper under wanted. I will sell some. They are in freezer, if you live near Dothan Al, Good luck.
