Flax Egg SubstituteWith the price of eggs soaring, a good substitute for cooking and baking is a flax egg. Use 1 Tbsp. of ground flaxseed meal and 2 1/2 Tbsp. of room temperature water for each egg. I refrigerate for 10 minutes or so.

This picture shows 3 eggs. I used it in a muffin recipe and it worked very well. We are saving our eggs for omelets, hard-boiled and scrambled.

Also an excellent source of omega-3s (brain food), Judy, and with soy sauce (or tamari for the salt-conscious), a pretty terrific thickener for stir-fry sauce.
