Freezing Vesuvio Potatoes?

I made them for a party and have a lot left over. Can I freeze them?

First that sounds really interesting, how do you make them?

Second, cut potatoes do not freeze well at all. Mashed a little better, still not great but if you add a bunch of milk when you reheat you can probably get away with it.

I have frozen cut up potatoes on several occasions. If they are blanched properly and dried before freezing the work perfectly in soups, stews or cut up for pan fried potatoes.

Mashed potatoes on the other hand have a tendency to get very water logged and I wouldn't recommend freezing them, the consistency changes drastically.
