Fried Green Tomatoes

Although we try not to eat a lot of fried foods, fried green tomatoes are a real treat sometimes and so simple to make.

  1. Wash tomatoes and dry off with paper towel.

  2. Slice tomatoes approximately 1/2 inch thick.

  3. Sprinkle each slice with salt and pepper as desired.

  4. Pour olive oil in frying pan approximately 1/4 inch deep and heat on medium.

  5. Coat tomato slices with cornmeal and place in hot oil.

  6. Fry until browned on each side.

  7. Place on paper towels to drain.

I grew up with fried green tomatoes. My mother would soak each piece in a dish with buttermilk. Her mix would be some flour, corn meal, salt and pepper. She would dip each one and coat then put in hot skillet. Then she would put about a good pinch of brown sugar on top of both sides. This sometimes would take the bitterness out and we all like it this way.
