Fried Rice from Leftovers on plateI love turning leftovers into new meals in the following days, and this fried rice is one of my favourites! You can use any meat, veggies, and rice you have left over to make a new meal that tastes nothing like it used to. I used leftover ham and rice from Thanksgiving, and used up the rest of the veggies I had in the drawers. You can also use cooked veggies you have on hand, just chop them up and skip the first veggie sauteing process in this recipe. Have fun making your own version from your leftovers!

Using sesame oil is a fantastic addition for fried rice, especially because it changes the whole flavour of whatever you're trying to use up. I did not use any here due to a family member with an allergy joining us to eat. Otherwise, I highly suggest it!

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

  1. Heat some oil in a large nonstick pan over medium heat. Add onions, carrots, and bell peppers. Cook until softened, about 4 minutes.

  3. Stir in garlic and sprinkle with some salt. Cook for a couple minutes. Transfer everything to a bowl.

  7. Pour eggs into the same pan and sprinkle with salt and freshly ground pepper.

  9. Cook over medium heat, stirring frequently, until scrambled and fluffy. Transfer to another bowl.

  11. Return the cooked veggies to the pan. Add the chopped ham. Cook over medium-high heat, stirring frequently, until edges are browned, about 3 minutes.

  13. Move the veggies and ham over and add a bit of oil to the pan. Add the rice and turn heat up to high.

  15. Add soy sauce and hot sauce. Cook for a few minutes, stirring frequently.

  17. Stir the scrambled eggs in and shut off the heat. Sprinkle everything with garlic powder and stir well. Serve immediately.
