You can replace any or all of these fruits with your choices such as kiwi, papaya, blackberries, blueberries, strawberries, peaches, nectarines, or canned, crushed and drained pineapple.

Preheat oven to 350 degrees F.

Press cookie dough evenly into a 12 inch pizza pan and bake for 15 to 20 minutes, until golden brown. Cool in pan on wire rack.

I don't know what I like more about this dessert, the fact that it's so pretty, or that it tastes so good! This is my daughters favorite. She was begging me to make it again for the longest time. Once I did, I remembered why. :)

The crust is a sugar cookie, I simply use the pre-made roll from the store. Why complicate life, right? The "sauce" is creamy, the toppings are sure to wow at your next gathering, even if it's just around your own dinner table.

Impressive dessert, very little time.

Total Time: 20 minutes

Yield: About 12 servings

Source: Modified from a recipe in my Red Hat Society cookbook

Ingredients:

  • 1 (16.5 oz) roll pre-made sugar cookie dough
  • 1 (8 oz) pkg cream cheese
  • 1/3 cup white granulated sugar
  • 1 Tbsp vanilla extract
  • 1/2 cup strawberries
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1/3 cup apricot preserves
  • 1 Tbsp water
Ad

Steps:

  1. Grease your cookie sheet, round or rectangular will do.
  2. Press your dough evenly onto your pan. Bake in a 375 degree F oven for about 10 minutes. Please be careful not to overcook your cookie. You want your "crust" to be soft and chewy.
  3. With an electric hand mixer, beat your softened cream cheese, sugar and vanilla until smooth. When your cookie has cooled, spread this evenly over it.
  4. Place your fruit evenly atop your "sauce". You may use any fruit you like, including canned. I simply prefer fresh berries.
  5. In a small bowl, whisk your preserves with your water until well blended. Drop this evenly over your pizza. You may use any jam or jelly, orange marmalade is delicious too.
  6. Cut and serve!

Ingredients

Directions

Use biscuits pressed onto a pizza pan. Add one or a combination of your choice: make a fruit pizza with canned fruits with all juice removed. Pat dry with a paper towel or clean white cloth.

I have used clean white wash cloths. Just make sure all biscuits are touching. Don't press too thin. Bake at 350 degrees F until biscuits are lightly browned. Keep an eye on them. They don't take that long. (10 minutes) I have added cinnamon to mine for extra flavor.

Regular Pizza Variation:

Put on them what you like. You can use this to make a pizza with all your favorite toppings: tomato sauce, cheese, pepperoni, peppers, onions etc. Use your imagination to come up with your own ideas
