Ginger and Orange Rhubarb
Rhubarb is now in season and at its best. I think it's best cooked really simply, and it is delicious with ginger. I have had it cooked this way ever since I was a child.
- four stalks rhubarb
- thumb-sized knob of ginger, chopped very fine
- quarter of a pint of orange juice
- between half and one cup of sugar (to taste)
Cut the rhubarb into short pieces, sprinkle with sugar and chopped ginger, then pour on orange juice and stew gently on a low heat until soft (about half an hour). Delicious with cream or vanilla ice cream.
