Japanese Fruit Sandwich

This is a popular sweet treat from Japan that falls under the sandwich category because it is assembled like one. The outcome is more of a cake, and it is so refreshing and delicious. We like to have these for afternoon tea. It's so easy to make, it's a great all-ages recipe.

In Japan, we use "shokupan" which is milk bread. You can use any fluffy white bread for this. I used kiwis and strawberries, but you can use any fruit you like: mangos, peaches, bananas, mandarin oranges. I added a top layer of cream and fruit to present it like mini cakes, but you can just leave it as the sandwich and cut it in half or into quarters, if you like.

  1. Thinly slice your fruits. Pat dry with a paper towel to remove excess moisture.
  2. Add an even layer of whipped cream to a piece of bread. Lay down a layer of kiwis, then a layer of strawberries on top. Add whipped cream to another piece of bread.
  3. Press the second piece of bread down onto the fruit. Make sure there's enough whipped cream to fill any gaps the fruit isn't filling. Optional step but recommended: wrap sandwich tightly in plastic wrap and refrigerate at least 1 hour.
  4. Slice the crusts off the bread. This is done now instead of beforehand because keeping the crust on during assembly keeps it more sturdy.
  5. You can slice diagonally and serve, but I wanted to make a topping for presenting it like little cakes. Swipe on some whipped cream to the top of the sandwich.
  6. Add some kiwis on top, then cut it into 4 pieces. Add sliced strawberries and grapes for decoration.

Yes, I thought that when I saw the bread, that the whipped cream spread on it would completely make the bread taste just like cake, yummy!!
