Kale and Onion Quinoa

This is one of my favourite go-to one pot side dishes. It's packed with protein, fiber, anti-oxidants and is super yummy. You will only need a handful of ingredients!

Total Time: 25 minutes

Yield: 2 servings

Ingredients:

Steps:

  1. First remove the thick bottom parts of the stems from the center of the kale leaves, the supporting ribs. Finely chop the kale leaves, and the onion.
  2. Heat cooking oil in a pot over medium heat. Add onions and cook until softened, then add kale. Cook over medium heat for a few minutes.
  3. Pour quinoa into kale and onion mixture, stir for a minute, then add water. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
  4. Add salt and pepper to taste. Serve.
