Lemon Blueberry Sheet Pancakes

Cutting the sheet pancake into pieces.Delicious and much less messy than making on the stovetop. These freeze well and reheat in 90 seconds from frozen.

Total Time: 25 minutes

Yield: 8 servings

Ingredients:

  • Cooking spray
  • 1-1/2 cup unbleached all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 2 Tbsp unsalted butter, melted and cooled slightly
  • 2 cups buttermilk
  • 2 large eggs
  • 1 medium lemon, juice and grated zest from
  • 2 tsp vanilla extract
  • 1 -1/2 cup blueberries
  • 1/4 cup water
  • Toppings of choice (optional)

Steps:

  1. Preheat the oven to 425 degrees F.
  2. Spray a rimmed 13×18-inch sheet pan with cooking spray.
  3. Cut a piece of parchment paper to cover the bottom completely.
  4. Lining the sheet pan with paper towels.
     
  5. Place on the sheet pan and spray more oil on the parchment and around the sides of the sheet pan.

  7. In a bowl, whisk together the flours, sugar, baking powder, baking soda, and salt.
  8. Mixing the pancake batter in a bowl.
     
  9. In another bowl, whisk together the butter, buttermilk, eggs, lemon juice and zest, vanilla, and 14 cup water until thoroughly combined.
  10. Mixing the pancake batter in a bowl.
     
  11. Add the wet ingredients to the dry ingredients and whisk until just combined.
  12. Mixing the pancake batter in a bowl.
     
  13. Fold in the blueberries.
  14. Pour the batter into the prepared sheet pan. Spread evenly with a spatula, then tap the sheet pan on the counter a few times to settle the batter.
  15. The lemon blueberry batter poured into a sheet pan.

  16. Bake, rotating the pan halfway through, until golden and set, about 15 minutes.
  17. The baked sheet pancake.
     
  18. Let cool for 5 minutes in the pan.
  19. Place a large cutting board over the top of the pan and flip the pancake onto the cutting board.
  20. Flipping over the sheet pancake.
     
  21. Cut into 16 squares. A serving is 2 squares. Add toppings if desired.
