Making Buko-Pandan Cake

Buko-Pandan Cake on plateNatural is always a good thing especially with food. This recipe uses coconut and pandan with no added artificial colors or flavorings.

Ingredients:

  • 1/2 cup young coconut meat crushed/blended
  • 1/2 cup young coconut meat cut into strips
  • 1 cup pandan juice
  • 2 cups all purpose flour
  • 1 cup brown or caster sugar
  • 1 large egg
  • 1/2 cup evaporated milk
  • 1 Tbsp baking powder

Steps:

  1. To prepare the pandan juice, spin 3 pcs long leaves with 1/2 cup water in a blender. Strain the juice and set aside.
  2. For the cake, mix all dry ingredients in a bowl.
  3. Separate egg and mix the yolk into dry ingredients.
  4. Pour in blended coconut meat and milk.

  6. Then the pandan juice, and mix very well.
  7. Meanwhile, beat egg white until foamy and stiff.

  9. Fold in egg white into the cake mixture until well combined.
  10. Fold in coconut meat strips.

  12. Pour mixture into a greased baking pan and bake over 180 C or approximately 350 F for 30 minutes.

What can I use as a substitute for pandan juice? I have absolutely no idea where to get pandan leaves in St. Louis, Missouri.

There appear to be several Asian markets in the St. Louis area that may be able to help you. Be cautious of pandan extract, as some artificially flavored. If you are at an Indian store, it is called kewra. You can order pandan essence or leaves on Amazon if you can't find it in your local area.

Otherwise, you could substitute vanilla extract. It won't be the same but it will still be delicious.
