Making Chia Sunflower Bread

I love breads that are exploding with grains, but nothing beats a fresh homemade loaf. Here's how to make one of my favourite loaves, studded with chia and sunflower seeds.

Prep Time: 20 minutes plus rest time

Cook Time: 20 minutes

Total Time: 40 minutes

Ingredients:

  • 3 cups bread flour
  • 1/2 cup blend of chia seeds, sunflower seeds, and oatmeal
  • 1 Tbsp butter
  • 1 tsp salt
  • 1 Tbsp sugar
  • 2 Tbsp skimmed dry milk
  • 2 tsp dry yeast
  • 10 fl oz warm water

Steps:

  1. Mix everything with with just 2/3 of the seed mixture, reserving the rest for the top. Knead well by hand or mixer. Place the dough in a bowl and cover with a damp cloth. Place in a warm area for one hour, or until it doubles in size. Roll dough onto a lightly floured surface. Knead about 100 times.

  3. Place dough in a nonstick baking pan (or greased and floured pan). Cover with a damp cloth and allow to rest about an hour, until doubled in size.
  4. Lightly spray water on the top, then spread on the rest of seeds. Bake in a 400 F preheated oven for about 18-20 minutes.
