Oh how I love churros. This recipe brings you the soft interior and crisp exterior of churros right into your waffle maker. This is an excellent breakfast treat, but also makes a fab dessert!

Yield: 6 servings
Ingredients:
2 cups all-purpose flour
3 Tbsp granulated sugar
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 cups buttermilk
1/2 cup butter, melted
2 large eggs
1 tsp vanilla extract
2 Tbsp butter, melted
3 Tbsp granulated sugar
2 tsp cinnamon
Steps:
In a large bowl, whisk together flour, 3 tablespoons sugar, baking powder, baking soda, and salt.
Separate the egg whites from the yolks in a large bowl. Set aside.
In another bowl, whisk together buttermilk, 1/2 cup melted butter, egg yolks, and vanilla.

Mix this wet mixture with the dry mixture.
Now, beat the egg whites with a mixer until stiff peaks form.
Very gently fold the egg whites into the rest of the batter.
When the iron is hot, grease with some cooking spray. Pour batter onto iron, leaving the edges clear as not to overflow it. Cook for about 5 minutes each, until golden.

Mix together remaining sugar with cinnamon in a bowl.
Brush the remaining melted butter onto each waffle, then sprinkle with some cinnamon sugar.
