March 25th is "International Waffle Day".
- 2 1/2 cups flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1 tsp. sugar
- 2 cups buttermilk
- 2 Tbsp. vegetable oil
- 1 egg yolk
- 2 egg whites
- Powdered sugar
- Pure maple syrup
Sift dry ingredients. In separate bowl, mix milk, oil and egg yolk. Combine, and fold in beaten egg whites. Cook on waffle iron. Use your choice of topping.

- 2 cups flour
- 3 tbsp sugar
- 1 tsp salt
- 3 tsp baking powder
- 2 eggs, separated
- 1 3/4 cup milk
- 4 tbsp melted butter or canola oil
Sift dry ingredients into mixing bowl. Stiffly beat egg whites. Add milk & egg yolks slowly. Beat until smooth. Add melted butter & beat. Fold in stiffly beaten egg whites.
Cook in waffle iron.
- 2 eggs
- 2 cups flour or whole wheat flour
- 2 Tbsp. sugar
- 1/2 cup vegetable oil, margarine or butter, melted
- 4 tsp. baking powder
- 1/4 tsp. salt
- 1 2/3 cups milk
Heat waffle iron. Beat eggs in a medium bowl until fluffy. Beat ion remaining ingredients just until smooth. Do not over-mix. Pour batter onto center of hot waffle iron. Bake 5 minutes or until steaming stops. Remove carefully. Makes twelve waffles.
