Waffles

Ingredients:

  • 2 cups flour
  • 3 tbsp sugar
  • 1 tsp salt
  • 3 tsp baking powder
  • 2 eggs, separated
  • 1 3/4 cup milk
  • 4 tbsp melted butter or canola oil

Directions:

Sift dry ingredients into mixing bowl. Stiffly beat egg whites. Add milk & egg yolks slowly. Beat until smooth. Add melted butter & beat. Fold in stiffly beaten egg whites.

Cook in waffle iron.

Waffles II

Ingredients

  • 2 eggs
  • 2 cups flour or whole wheat flour
  • 2 Tbsp. sugar
  • 1/2 cup vegetable oil, margarine or butter, melted
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 2/3 cups milk

Directions

Heat waffle iron. Beat eggs in a medium bowl until fluffy. Beat ion remaining ingredients just until smooth. Do not over-mix. Pour batter onto center of hot waffle iron. Bake 5 minutes or until steaming stops. Remove carefully. Makes twelve waffles.

I make corn bread also called Johnny cake batter and cook in my waffle iron, very hearty and so good.
