Layer fresh lettuce leaves on bottom of pan when making Enchilada's and put the rest of the ingredients on top of the lettuce leaves. Very tasty and the lettuce tastes wonderful.

We make enchiladas in the usual way but smother them with chopped lettuce on our plate. It adds a delightful contrast of hot (enchilada) and cold (lettuce). Once you try it, you'll be hooked!
