I make lots and lots of little (5" aluminum pie tins) every year - from our blueberries, blackberries, apples, etc. I make the crust, place in a tin, then put in the filling. The apples are just sliced and put in raw with cinnamon, sugar and a dollop of butter. The top crust is placed on, and then I use one square (about 6") of freezer paper and then aluminum foil to cover. They stay in the freezer for at least a year. Whenever my husband wants a pie, he pre-heats the oven to 375, and puts the frozen pie in for 45 minutes. Done! The berry pies are made into a compote filling with the spices and thickener first, before putting into the raw pie dough. They cook the same, however.
