Do you need a quick, easy and healthy side dish? You can prepare couscous. For an even quicker option, I have used a jarred Moroccan couscous that also has vegetables. This couscous is topped off with fresh cilantro, dried raisins, pumpkin seeds and garbanzo beans. I cooked 2 cups of couscous which was enough to feed 4 people as a side.
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15-20 minutes
Yield: 4 people
- 2 cups couscous
- 4 Tbsp cilantro
- 1/2 cup dried raisins
- 1/2 cup pumpkin seeds
- 15.5 oz can garbanzo beans
- Prepare your couscous. Follow recipe on the packaging. It requires water, oil, salt and is prepared on the stovetop. This process took about 10 minutes.
- Toss with chopped cilantro, raisins, pumpkin seeds and garbanzo beans.
