Squash Stir Fry

A recipe I've learned from my second mom (my mom's sister). We used to cook this from breakfast to dinner. My siblings and I have different versions, but this one is our favorite.

Ingredients:

Steps:

  1. Chop squash into mini cubes.
  2. Saute garlic in 1 Tbsp. vegetable oil until slightly brown.
  3. Add the squash. Sprinkle pinch of salt and pepper. Stir until parts are slightly brown.
  4. Pour water and cook over medium heat for one minute.
  5. Add oyster sauce and simmer for another one minute.
  6. Add beaten eggs.
  7. Stir mixture until sauce is completely reduced and absorbed by the squash.
  8. Top with sunny side up egg only if you like. Best served hot.
