Stir Fry Vegetable Soba

A quick meal prepared with frozen vegetables and noodles. I served mine with leftover chicken.

Ingredients:

Steps:

  1. Prep your soba noodles. Follow instructions on the packaging for boil time. About 7-8 minutes.
  2. In a large pan, add oil and quickly stir fry soba noodles with a splash of soy sauce for a few minutes.
  3. Add eggs (your desired amount) and scramble all together.
  4. Add your choice of vegetables. I used frozen corn, peas and spinach. Ready to eat alone or serve with any left over meat you have - I had leftover chicken with I re-heated in the toaster oven.
