Sweet Pepper Relish

Sweet Pepper RelishWhen I serve this relish my guests agree that it is the best relish they have ever tasted. It is not your typical pickle relish, but is made from sweet peppers and onions. It can be made entirely from green peppers, but the sweet red pepper gives it a beautiful appearance. I use a mini food processor to chop the onions. It is so easy.

Prep Time: 20 minutes

Cook Time: 4 minutes for syrup

Total Time: 15 minutes

Yield: 1 pint

  1. Simmer vinegar, sugar and salt over medium heat for four minutes. Allow to cool.
  2. Finely chop peppers and onions. Drain well.
  3. Add cooled liquid to peppers. Stir.
  4. Can be stored in glass bottles or plastic containers.

I would like to try this, only with Splenda instead of sugar. I think I will make it both ways...One with sugar and one with Splenda....I have never seen a recipe like this
