Sweet Potato Pudding

June 9, 2011
A dish of sweet potato pudding. All ingredients do not have to be exact. Very easy, and can be made in different time slots when cooking.

  • 2 or 3 large sweet potatoes (about 4 cups full)

  • 4 Tbsp. margarine or butter, melted
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 2 eggs
  • 1 cup sugar or Splenda (I use Splenda because I'm diabetic). If using sugar add 2 Tbsp. corn starch.
  • 1 Tbsp. corn starch
  • 1 cup buttermilk (or 1 cup sweet milk with 1 tsp. vinegar). If buttermilk is too sour add 1/2 tsp. soda.

Cook sweet potatoes until tender when pierced by a fork, about 1 hour. Pour into sink and drain immediately after cooking. Allow to cool enough to peel by hand.

Place peeled potatoes, butter, cinnamon, baking powder, eggs, corn starch, and buttermilk into bowl and mix with electric mixer until well blended.

Grease or spray with Pam a 2 quart dish. Pour mixture into bowl and bake at 350 degrees F for 30 minutes or until set.

I sometimes add additional spices, nutmeg, allspice, or cloves with the cinnamon, or additional cinnamon. I am a cinnamon lover.

This is a good and easy recipe for sweet potatoes. This time of year they are plentiful and cheap. I add some different spices at times to change the flavor a little.

Here's one recipe for Sweet Potato Pones and you can find others doing a google search. I like putting pecans in mine and there are other variations of this recipe. I'm sure you'll find one you like best.

The only thing I make with grated sweet potatoes is Potato Pudding. This is an old, old recipe, so when it comes to cooking in a slow oven, you will have to determine which low temp. to cook it. It needs to cook long enough for the eggs to cook. Hope this is what you wanted. Recipe follows:

Sweet Potato Pudding
4 large sweet potatoes, grated
2 cups sugar
1 3/4 stick margarine
3 eggs
2 Tablespoons vanilla flavoring

Enough Carnation milk until it looks like cornbread. Use more than 1 small can. Cook in a slow oven until done.

My mother used to make this. I remember eating it as a child and it was so good. This is my cousin's recipe. When her health was good, she would make this and bring it to our covered dish family gatherings.

It was enjoyed by all.
