Toasted coconut made in the microwave.If your shredded coconut dries out too much for certain recipes you normally would use it for, simply toast it on a baking sheet in a moderately heated oven, turning occasionally so it will brown evenly. The coconut will develop a lovely toasted flavor for other recipes and/or toppings. Toasted coconut tastes especially yummy sprinkled on a salad coated with Sesame dressing.
