Upside Down Pineapple CakeThis is a recipe I got from a friend and it is so good. It uses eggs, canned coconut milk, and pineapples. Pineapple can be canned but it can also be fresh. As long as you get those nice wheels at the bottom of the pan, it will work out well.

Prep Time: 1 hour

Cook Time: 45 minutes

Steps:

  1. To make glaze: melt butter, add brown sugar, and cook on stovetop on medium low for 5 minutes

  3. Spread glaze on bottom of cake pan, and press pineapple rings into it.

  5. To make cake: Preheat oven to 350 F.
  6. Mix dry ingredients together with a sifter or other method (salt, baking powder, etc).

  8. Cream butter and sugar.

  10. Add eggs one at a time to creamed butter.

  12. Alternate flour mixture with pineapple juice and cream of coconut.

  14. Pour batter into baking dish over pineapple and glaze. Bake at 350 F for 45 minutes to an hour.
