Tri-colored sweet peppers placed in a muffin tin, ready for stuffing.Sweet peppers (capsicum, bell peppers) are delicious stuffed and roasted, but not easy to keep upright. To stop them falling over in the oven while they are baking, simply pop each one in a muffin tin.

Another option is to cut them in half vertically. They don't tip.

Yes, I do that sometimes, especially if I don't feel like I could eat a whole one, but they still sometimes tip to one side a little
