  • You could make a hashbrown omelette with hashbrown, onions, green pepper & eggs.
  • You could make a hamburger with sautéed green pepper and onions. Sunny side up egg inside burger with side of hashbrowns.

You can make a variation of shepherd pie. Mix the eggs into the potatoes to make a crust and brown off the meat, onions and peppers. Pat the hash brown mixture on the top and bake. Hubby has done this, but since I don't eat eggs, he left those out of the hash brown mix--but then it didn't set up well. I don't know the proportions--how many eggs to how many potatoes--I am thinking one to several cups.

He often makes different variations to shepherd pie in a large metal baking dish. It needs to be well greased and all of the fat drained from the beef. You can also do another variation like a lasagna--layer of the beef mix, (you will need a cheese), layer of cheese, layer of hash browns, etc. Top with cheese. I love that dinner. Then you would use the eggs in the ricotta mix. Again--I ask him to leave out the eggs, but most people use it there. Blessings and happy dinners!

Hope you made something delicious!
If I had those ingredients I would:
1.) first brown onions and green pepper - set aside
2.) brown hamburger - discard fat - set aside - keep warm
3.) brown hash browns - set aside

4.) scramble eggs till just set - save eggs to go no top or
5.) add everything back to pan and gently mix - warm slowly
6.) add condiments of choice
....hot sauce or hot pepper sauce or salsa or soy sauce optional
