Whole Wheat Muffins
I love Mother Earth magazine. They specialize in living off the grid, and using our natural resources wisely. I trust their recipes, and they are all delicious. These muffins are simple and good.

- 2 cups whole wheat flour
- 2 tsp baking powder
- 2 Tbsp sugar
- 1 egg, slightly beaten
- 1 cup milk
- 1/4 cup oil
- Sift together flour, baking powder and sugar.
- Combine egg, milk and oil. Add to dry ingredients. Do not overmix.
- Fill greased muffin pans 2/3 full. Bake at 400 degree (hot oven) about 20 minutes.
- Cool on wire rack.
