Peanut Butter Balls on parchment paperI made these over Christmas to top off dessert trays. Everyone went crazy over them! Remarks like I can't eat just one. They are very easy and taste better than a Reese cup.

Steps:

  1. Using a double boiler, fill the bottom pan with 2 cups of water. Put the top pan on. Add the chocolate chips and oil. When it start to boil, turn down to a simmer and stir.

  3. In a bowl add measured peanut butter, butter, vanilla and confectioners sugar. Stir hard. It will be hard.

  5. Use clean hands and knead the dough until everything is mixed.

  7. Hold a small amount in your warm hands and roll into a ball and place aside. Continue until you are done making all the peanut butter balls.

  9. Stick a toothpick in each ball.

  11. Pour the hot melted chocolate into a measuring cup. Lay out two large pieces of parchment paper.

  13. Take each ball by the toothpick and dip into the chocolate and place on the parchment paper.

  15. When done putting gently into a pan and place in the freezer for two hours. Then you can put them on a dish to serve. These need to be refrigerated!

i have made these, but added a tad of parafin (not spelling it right sorry) 1 tbsp. helps helps choc to set firmly. yeah these are delicious.

Great idea! The vegetable oil works well to make them shiny and makes the chocolate not stick so hard to the parchment paper. Thanks for the idea! They are addicting, hey???
