Banana Crumb Muffins

Ingredients:

  • 1 1/2 cups all purpose flour
  • 3 large ripe bananas, mashed
  • 1 tsp. baking soda
  • 3/4 cup sugar
  • 1 tsp. baking powder
  • 1 egg, slightly beaten

  • 1/2 tsp. salt
  • 1/3 cup butter or margarine, melted

Topping:

  • 1/3 cup packed brown sugar
  • 1 Tbsp. flour
  • 1/8 tsp. cinnamon

Directions:

Preheat oven to 375 degrees F. In large bowl combine the first 4 dry ingredients. In a separate bowl mix the rest of the ingredients. Stir banana mixture into dry ingredients until just moistened. Fill muffin cups 2/3 full.

Combine the Topping ingredients. Cut in 1 Tbsp butter or margarine until crumbly. Sprinkle over muffins. Bake for 18 to 20 minutes. Cool in pan for 10 minutes.

I made these banana muffins today and they are perfectly delicious. My boyfriend, who doesn't usually eat my baked goods said they were the best muffins he has ever had.
